Until last week it had been several months since I had made these Quesadilla’s. Not because we don’t like them or because they are too hard. We actually do love these Quesadilla’s and they really are easy to make. I just hadn’t made them. But they are back on our monthly menu.
These Quesadilla’s were probably my first experience with black beans and I actually think they’re great, even on salad. Do you like black beans?

You could easily leave the chicken off, but my family seems to think it isn’t a meal without meat/chicken, hence the Chicken & Black Bean Quesadilla’s birth!

1 tsp olive oil

1/2 Cup Diced Red, Orange or Yellow Bell Pepper, or other color if you choose

1/4 Cup Onion, diced

1/2 Cup corn

1/2 Cup black beans, rinsed & drained

2 Cups Chicken breasts, grilled/cooked & diced

Season with salt & pepper to taste, if desired

1 pkg flour tortillas

Colby Jack Cheese, shredded

Heat oil in a pan, add bell pepper & onion. Cook until tender.

Add corn, black beans, heat through.

Add chicken, season to taste, unless you seasoned while cooking/grilling the chicken.

Then lightly spray one side each of two tortilla’s w/ a non-stick spray, the sides that will touch the pan so they will likely brown.

Spoon the mixture into the tortilla, then add shredded cheese.

Then put the tortilla’s together, or you can use one tortilla and fold.

Grill both sides until lightly brown &/or cheese is melted.

Then carefully lift out w/ a spatula & place on a flat surface.

Then cut into quarters.

Serve alone or with guacamole, chips, queso, rice, beans, sour cream, etc.


This is a great time to have a Quesadilla maker. But if you don’t have one, a pan will work great. I have a Quesadilla maker but since I was taking pics while making these tonight I thought it would be easier to use my pan.

Making these Quesadilla’s is a great time to use left-over veggies and chicken.

We normally use a bag of the frozen corn, we like the texture & flavor better and at times have left over.

We normally use the small colorful bell peppers since we normally have them on hand for salads, etc.

If you like your Quesadilla’s a little spicier, this would be a great time to add some chopped peppers like these Roasted Peppers.

  1. Your quesadillas look delicious. I make them at our house but not too often, since the cheese I need to purchase for my husband and kids is a little expensive. I will have to give this recipe a try the next time I make them. Thanks for sharing it.
