No Fail Crock-Pot Roast, Recipe

With the summer coming up I will be using our crock-pot more often so that I don’t heat up the entire house w/ the oven. And one of my favorite crock-pot meals is Roast w/ Potatoes & Carrots.

I always thought that I knew how to make a Roast. In fact, that is something that I learned to make just like my mom had made.

But in May 2007 when my mother-in-law passed away our neighbor made us a yummy Roast w/ Potatoes & Carrots, not to mention, scrumptious gravy. :-)

I realized that my Roast meal wasn’t nearly as yummy as the one our neighbor made for us. So once things settled down I called to ask her what I was doing wrong.

So guess what? Today I am going to share with you how to make a yummy Roast w/ Potatoes & Carrots. Don’t worry I will also share with you how to make the gravy! Can’t have Roast w/ Potatoes & Carrots without gravy, right?! ;-)

Since learning to make roast, I have learned that I am not the only one that doesn’t know how to make a yummy roast. I have a friend here in OKC that has never made a roast. So hopefully my recipe and directions will inspire you!

Roast w/ Potatoes & Carrots

Roast, 3 lb

1-2 lbs Carrots, peeled & cut

1-2 lbs Potatoes, peeled & cut

2-4 TBSP oil

1 carton beef broth

1 package onion soup mix


Heat the oil over medium heat in a frying pan large enough for the roast. Take the thawed roast & rub flour all over. Now place in the heated oil. Brown the roast on both sides. While you are browning roast put the broth into the crock-pot and turn on, place lid on. The broth needs to be warm when you add the roast to the crock-pot.

Once the roast is browned on both sides, place into the warm broth inside the crock-pot. Then pour a package of the onion soup mix on top. Then pour in the potatoes & carrots, being careful not to splash broth. Put the lid on and cook on high for 4-5 hours or until the roast is tender enough to pull apart w/ a fork.

When it is done you can put all of the veggies into a dish w/ the roast on a plate, as I have done.

I normally purchase a rump roast that is about 3 pounds (give or take). I also buy regular carrots, not the baby carrots. We also love the red potatoes but this particular day I didn’t have them on hand so I used the russet.

You can add additional seasoning if you like, but really not needed. I may add pepper when serving.

Left-over Roast makes a great burrito, on a tortilla. Also, you can take a TBSP of oil & fry up the potatoes & carrots as a side w/ another dish.

If you’re serving as a left-over you can also diced up some of these Oven-Roasted Anaheim Peppers to the pan.

Serve w/ bread or rolls.

Roast Gravy Recipe:

You’ll want to serve this meal w/ gravy so here is that recipe.

After you have taken the veggies and roast out of the broth pour all but about 1 cup into a saucepan. In the 1 cup of broth add 1-2 TBSP flour. Stir briskly w/ a fork. If it is thick then add to the saucepan. Stir well. If it isn’t thick enough add more flour, a little at a time. Heat over low until it reaches its desired thickness.

If you make a roast in water instead of using brother, you’ll definitely want to try this recipe. I had always used water to cook my roast until my neighbor shared w/ me her recipe. It really does make a wonderful difference. Once you try this Roast w/ Potatoes & Carrots Recipe, you’ll never go back to water & just regular seasoning.
